Sunday getting ready for the week

Living healthy means being prepared.  ..... and Sunday is the best day to get ready for the week ahead.
I cooked a pot of split peas (16 oz pack)...boiled 5 minutes ...then simmered for 1 hour...I chopped 2 sweet potatoes (raw) after about 20 minutes of cooking.... threw in  ....1 cup collard greens, 1/2 lb summer squash ... 1/2 eggplant.   I smashed 5 cloves garlic...1 tsp salt ...pepper...(to your taste).   ok ...this serves as my salad when I get home from work and starving...I heat up a bowl while I prepare dinner.  I'm not always balanced... (from six step book) when I get home from work ... my lack of will power and the fact I'm hungry ...can lead me down the wrong path.   My little bowl of LOVE  ... (the love I'm showing my body).....rocks!  

I also cooked up some wheat berries...another little bodily love.... these are the wheat seeds....full of nutrition!!!  lots of fiber and protein...fits the 200 calorie rule...(from the six step book)  (1/2 cup ....151 calories, ...4gr fiber & 6 gr. protein) rice could never keep pace in my world of wanting food with the highest nutrition and energy.     (1/2 cup rice...150 calories..0gr fiber...3 gr protein)...wheat berries  are also a good source of Iron and  essential minerals...rice has to be fortified by man...what a joke!!!

 Sundays are a perfect day to cook up wheat berries for the rest of the week.  I add these berries to a  lot of my vegetable  dishes...they keep in the fridge for several days....make sure you drain the water after cooking when you store in fridg...i put a little olive oil and salt on them.ummmmm.... I mixed 1 cup of cooked wheat berries with 2 cups mixed frozen vegetables ...or you can mix with brown rice...brown rice also not a big winner in my life, but  the wheat berries help bump up rice.   keep in mind when food isn't balanced you eat more of it!!!!!!

Ileana Ebanks ...she is going to school to learn all this website stuff....Go Girl!!!!...so with Ilean's help,....we should be getting this thing up and running...sorry for putting you  through the construction....keep checking.
